Speckled Potatoes

Serves: 6

Ingredients

  • 6 medium red potatoes peeled and thinly sliced
  • ½ cup onion minced
  • 1 clove garlic minced
  • 1 chicken bouillon cube
  • ½ cup chopped parsley
  • Salt and pepper to taste

Cooking Preparation

  • 1. In a large saucepan with one inch of water, combine potatoes, onions, garlic, and bouillon cube.
  • 2. Cover and cook 10 minutes on medium heat.
  • 3. Add parsley; cook 5 minutes more, or until potatoes are tender; drain water.
  • 4. Salt and pepper to taste.
