Skillet Zucchini with Chopped Tomatoes

Serves: 4

Ingredients

  • 1 teaspoon soft margarine
  • 2 small onions chopped
  • 4 small zucchini thinly sliced
  • 2 medium tomatoes chopped ground pepper

Cooking Preparation

  • 1. Melt margarine in a skillet over medium heat.
  • 2. Add onions and cook until softened.
  • 3. Add zucchini and cook for two minutes.
  • 4. Add tomatoes and cook for 3-5 minutes or until zucchini is tender.
  • 5. Season to taste with pepper.
  • 6. Serve.
