Onion – Bell Pepper Roasted Potatoes

Serves: 8

Ingredients

  • 8 small unpeeled potatoes
  • 2 small onion, halved lengthwise and thinly sliced
  • 1 small green pepper cut into 2 ½” X ¼” strips
  • 2 tablespoons low calorie margarine melted
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Cooking Preparation

  • 1. Cut each potato crosswise into ¼ inch slices, cutting to but no through the bottom of the potato.
  • 2. Gently insert onion slices and pepper slices alternately into slits.
  • 3. Brush with melted margarine.
  • 4. Sprinkle with salt and pepper.
  • 5. Bake at 425 degrees for 45 minutes.
  • 6. Let stand for 10 minutes before serving.
