Carrot and Raisin Sunshine Salad

Ingredients

  • 1 pound Michigan carrots peeled and shredded
  • ½ cup raisins
  • 1 carton low-fat vanilla yogurt
  • 4 lettuce leaves

Cooking Preparation

  • 1. Mix together all ingredients, except lettuce leave, in a mixing bowl.
  • 2. Cover and refrigerate for 15 minutes.
  • 3. Toss before serving.
  • 4. Serve on lettuce leaves.
